TURKEY & MUSHROOM SESAME LETTUCE CUPS

Ingredients 

For the filling:

  • 250g white button mushrooms, sliced
  • 200g turkey mince (5% fat)
  • 1 tsp olive oil
  • 2 tbsp soy sauce (or tamari)
  • 1 tsp sesame oil
  • 1 tsp maple syrup/honey
  • 1 tsp rice vinegar/lime juice
  • 2 garlic cloves, minced
  • 2 tsp grated ginger
  • Black pepper

To Serve:

  • 12 baby gem or little gem lettuce leaves
  • Sliced red chilli
  • 2 tbsp spring onion, finely sliced
  • 1 tsp sesame seeds

Method 

  1. Heat the olive oil in a non-stick pan over medium heat.
  2. Add the turkey mince and cook for 4–5 minutes, breaking it up, until lightly browned.
  3. Add the sliced white button mushrooms and cook for 8–10 minutes, stirring occasionally, until all the moisture has evaporated.
  4. Continue cooking until the mixture starts to brown slightly — this builds flavour.
  5. Add the garlic and ginger and cook for 1 minute.
  6. Stir in the soy sauce, sesame oil, maple syrup, and rice vinegar. Cook for 2–3 minutes until glossy and well combined.
  7. Season with black pepper and remove from the heat.
  8. Spoon into lettuce leaves and top with sliced red chilli, spring onion, and sesame seeds.
