Ingredients
For the filling:
- 250g white button mushrooms, sliced
- 200g turkey mince (5% fat)
- 1 tsp olive oil
- 2 tbsp soy sauce (or tamari)
- 1 tsp sesame oil
- 1 tsp maple syrup/honey
- 1 tsp rice vinegar/lime juice
- 2 garlic cloves, minced
- 2 tsp grated ginger
- Black pepper
To Serve:
- 12 baby gem or little gem lettuce leaves
- Sliced red chilli
- 2 tbsp spring onion, finely sliced
- 1 tsp sesame seeds
Method
- Heat the olive oil in a non-stick pan over medium heat.
- Add the turkey mince and cook for 4–5 minutes, breaking it up, until lightly browned.
- Add the sliced white button mushrooms and cook for 8–10 minutes, stirring occasionally, until all the moisture has evaporated.
- Continue cooking until the mixture starts to brown slightly — this builds flavour.
- Add the garlic and ginger and cook for 1 minute.
- Stir in the soy sauce, sesame oil, maple syrup, and rice vinegar. Cook for 2–3 minutes until glossy and well combined.
- Season with black pepper and remove from the heat.
- Spoon into lettuce leaves and top with sliced red chilli, spring onion, and sesame seeds.
