SWEET AND SOUR MUSHROOM FAKEAWAY

Ingredients 

For the Sweet and Sour Mushrooms:

  • 450g button mushrooms 
  • 5 cloves garlic, minced 
  • 1 tbsp oil (for frying)
  • Chopped green onion & sesame seeds, to garnish

 

For the Sweet and Sour Sauce: 

  • 2 tbsp soy sauce 
  • 1½ tbsp rice vinegar 
  • 1½ tbsp ketchup 
  • 1 tbsp sugar 
  • A pinch of black pepper 
  • 230ml cold water 
  • 1 tbsp corn starch, optional

Method 

  1. Make the sauce: In a bowl, whisk together soy sauce, rice vinegar, ketchup, sugar, black pepper and water. For a thicker sauce, stir in the cornflour until smooth.
  2. Cook the mushrooms: Heat oil in a frying pan over medium-high heat. Add the mushrooms and minced garlic. Sauté for 4–5 minutes until golden and fragrant.
  3. Add the sauce: Pour the sauce into the pan, stir well, then cover and simmer for 2–3 minutes, or until the sauce reduces and thickens slightly.
  4. Finish & serve: Garnish with chopped green onions and sesame seeds. Serve hot as a delicious side or spoon over rice or noodles for a simple meal.
