Ingredients
For the Sweet and Sour Mushrooms:
- 450g button mushrooms
- 5 cloves garlic, minced
- 1 tbsp oil (for frying)
- Chopped green onion & sesame seeds, to garnish
For the Sweet and Sour Sauce:
- 2 tbsp soy sauce
- 1½ tbsp rice vinegar
- 1½ tbsp ketchup
- 1 tbsp sugar
- A pinch of black pepper
- 230ml cold water
- 1 tbsp corn starch, optional
Method
- Make the sauce: In a bowl, whisk together soy sauce, rice vinegar, ketchup, sugar, black pepper and water. For a thicker sauce, stir in the cornflour until smooth.
- Cook the mushrooms: Heat oil in a frying pan over medium-high heat. Add the mushrooms and minced garlic. Sauté for 4–5 minutes until golden and fragrant.
- Add the sauce: Pour the sauce into the pan, stir well, then cover and simmer for 2–3 minutes, or until the sauce reduces and thickens slightly.
- Finish & serve: Garnish with chopped green onions and sesame seeds. Serve hot as a delicious side or spoon over rice or noodles for a simple meal.
