Ingredients
- 1 block of halloumi, sliced into cubes
- 200g baby chestnut mushrooms
- 150g chorizo slices
- 1 tbsp olive oil
- 3 tbsp sweet chilli
- Salt & pepper
Method
- Place a griddle pan over medium-high heat, then add the olive oil and halloumi cubes. Leave to sear for about 3 minutes, then rotate and continue to cook for a further 3 minutes.
- Set the halloumi aside in a bowl, then repeat the process for the baby chestnut mushrooms.
- Add the mushrooms to the bowl with the halloumi, along with the sweet chilli and a crack of black pepper.
- Fold a slice of chorizo over 3 times, then pierce with a cocktail stick. Add one piece of halloumi and one baby chestnut mushroom. Repeat for the remaining pieces.
- Optionally drizzle with an extra splash of sweet chilli and enjoy these umami, sweet bite-sized snacks!
