SWEET CHILLI, HALLOUMI AND MUSHROOM BITES

Ingredients 

  • 1 block of halloumi, sliced into cubes
  • 200g baby chestnut mushrooms
  • 150g chorizo slices
  • 1 tbsp olive oil
  • 3 tbsp sweet chilli
  • Salt & pepper

Method 

  1. Place a griddle pan over medium-high heat, then add the olive oil and halloumi cubes. Leave to sear for about 3 minutes, then rotate and continue to cook for a further 3 minutes.
  2. Set the halloumi aside in a bowl, then repeat the process for the baby chestnut mushrooms.
  3. Add the mushrooms to the bowl with the halloumi, along with the sweet chilli and a crack of black pepper.
  4. Fold a slice of chorizo over 3 times, then pierce with a cocktail stick. Add one piece of halloumi and one baby chestnut mushroom. Repeat for the remaining pieces.
  5. Optionally drizzle with an extra splash of sweet chilli and enjoy these umami, sweet bite-sized snacks!

 To Note: You’ll need cocktail sticks for this recipe.
