SMACKED CUCUMBER SALAD WITH SOY AND HONEY GLAZED MUSHROOMS

Ingredients 

  • 300g chestnut mushrooms, thinly sliced
  • 1 cucumber
  • 2 small shallots, thinly sliced
  • 1 clove of garlic, finely grated
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • ½ tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 tsp chilli crisp (or chilli flakes if you don’t have)

Method 

  1. Start by adding 1 tbsp olive oil to a large frying pan over a high heat. Next, add the mushrooms and leave to brown for 4 minutes.
  2. Next, reduce the heat to medium and add 1 tbsp soy sauce and 1 tbsp honey. Continue to fry for 2 more minutes.
  3. Pour onto a plate to cool for at least 10 minutes. Meanwhile, lightly bash the cucumber with the side of your knife, then thinly slice on the diagonal.
  4. To a bowl, add rice vinegar, 1 tbsp soy sauce, sesame oil and chilli crisp. Stir to combine, then add the cucumber, mushrooms, garlic and shallots. Mix until everything is incorporated.
  5. Optionally top with fresh coriander and sesame seeds. Enjoy!
