Ingredients
For the Mushrooms:
- 300g portobello mushrooms
- 100ml soy sauce
- 2 tsp paprika
- 2 tsp garlic granules
- 3 tsp miso paste
For the Tzatziki:
- 2 tbsp greek yogurt
- 1 cucumber, grated
- 3 cloves garlic, chopped
For the Pittas:
- 2 large white pittas
- 1 red pepper, chopped
- 1 large tomato, chopped
- 1 tbsp pickled onions
- 1 handful mint
Method
Add all your mushroom ingredients to a bowl, mix well then leave to marinate for 1 hour.
In another bowl, mix all your tzatziki ingredients together, season with salt & pepperand put in the fridge.
Put the mushrooms in a pan (or on skewers) and fry until soft.
In a separate pan, fry your pepper in olive oil until soft. Remove from the pan then add the pittas for 2 mins on each side until warm.
Build your pittas by layering the bread with tzatziki, followed by mushrooms, peppers, tomatoes, pickled onions and mint Enjoy!
