PORTOBELLO MUSHROOM LOADED PITTAS SERVED WITH SALAD

Ingredients 

For the Mushrooms:

  • 300g portobello mushrooms
  • 100ml soy sauce
  • 2 tsp paprika
  • 2 tsp garlic granules
  • 3 tsp miso paste 

For the Tzatziki: 

  • 2 tbsp greek yogurt
  • 1 cucumber, grated
  • 3 cloves garlic, chopped 

For the Pittas: 

  • 2 large white pittas
  • 1 red pepper, chopped
  • 1 large tomato, chopped
  • 1 tbsp pickled onions
  • 1 handful mint 

Method 

  1. Add all your mushroom ingredients to a bowl, mix well then leave to marinate for 1 hour. 

  2. In another bowl, mix all your tzatziki ingredients together, season with salt & pepperand put in the fridge. 

  3. Put the mushrooms in a pan (or on skewers) and fry until soft. 

  4. In a separate pan, fry your pepper in olive oil until soft. Remove from the pan then add the pittas for 2 mins on each side until warm. 

  5. Build your pittas by layering the bread with tzatziki, followed by mushrooms, peppers, tomatoes, pickled onions and mint Enjoy!
