PIZZA STUFFED MUSHROOMS

We’ve teamed up with Serena Patel for this mushroom recipe:

Ingredients 

  • 1 pack of chestnut mushrooms (you can also use portobello / flat mushrooms)
  • 1 tsp unsalted butter
  • 2 tsp minced garlic
  • 1 tsp pizza sauce of choice, per chestnut mushroom
  • Mozzarella cheese (grated)
  • Small pepperoni slices
  • Dried oregano
  • Salt & black pepper to taste
  • Olive oil spray
  • Fresh basil, finely chopped

Method 

  1. Clean the mushrooms with a damp paper towel & dry.
  2. Once dry, remove the stalks and chop up finely till minced, then add to a small pan, melt the butter & fry the minced mushroom stalks with the minced garlic on medium heat for a few minutes till soft, then add to a small bowl with the pizza sauce and mix to combine.
  3. Spray an air fryer tray with a little olive oil, then add the chestnut mushrooms, leaving some space between them, and spoon in a teaspoon of the mushroom pizza sauce into the centre of each.
  4. ⁠Top with some grated mozzarella & a few small pepperoni slices (cut if needed), then finish with a sprinkle of dried oregano & season with salt & black pepper to taste.
  5. Spray with a little oil & air fry for 15 mins on 180C until golden (or in a preheated oven for 20 minutes).
  6. ⁠Serve with your favourite dip & enjoy!
