Ingredients
For the Base:
- 1 bulb roasted garlic
- 200g soft cheese
- 100g mozzarella
- 100g grated parmesan (half for base and half on top)
- Salt & pepper
For the Pizza:
- 1 ball pizza dough (homemade or shop bought)
- 200g chestnut mushrooms
- Handful rocket
- Olive oil
Method
Roast your garlic bulb in the oven or air fryer with olive oil until soft. Squeeze out and use about half for your base, put the other half in the fridge (you can use it for other sauces, will keep for a few days).
Mix your base ingredients together until smooth (you can add 1 tbsp of water to loosen the sauce if it’s looking a bit thick). Stretch out your pizza dough on a floured surface, then cover with your the base mixture and top with the mozzarella and remaining parmesan. Chop and fry your mushrooms, then add to the pizza with a drizzle of olive oil, salt & pepper.
Place your pizza in the oven for 2-3 mins (or as per pizza oven instructions).
When pizza is done, remove from the oven. Top with rocket, salt & pepper, then swirl over your olive oil. Enjoy!!!
