MUSHROOM JACKET POTATO

Ingredients 

  • 2 Large potatoes 
  • 2 tbs sunflower oil 
  • 250g mushrooms (can be White, Button or Brown Mushrooms)
  • 100g Sour Cream & Chive Dips 
  • Sprigs of Dill

Method 

  1. Preheat the oven to 200°C / 180°C fan/gas mark 6.

  2. Prick the potatoes all over with a fork, then rub them with half of the sunflower oil.

  3. Place on a baking tray and bake for 1 hour 20 minutes, or until crisp on the outside and fluffy inside.

  4. Meanwhile, slice the mushrooms and fry them in the remaining oil until golden and tender.

  5. Remove from heat and stir in the sour cream & chive dip until well combined.
