Ingredients
For the Blended Burger Mix:
- 250g mushrooms
- 250g Beef mince
- 25g White miso paste
- 1 teaspoon of Garlic powder
- 1 teaspoon of onion powder
- Pinch of salt
- Pinch of pepper
For the Burger:
- 2 tablespoons plus 2 teaspoons extra-virgin olive oil
- 4 bread buns
- 4 slices of Swiss cheese
- 8 rashes of bacon (2 per burger, or more if you’re a bacon lover)
- Mayonnaise (feel free to jazz it up by adding a little teaspoon of miso paste)
- Pickled shallots
- Rocket
Method
Blended burger mix
- Finely chop the mushrooms with a knife so they are the same constancy of your beef mince, or for speed pulse with a food processor.
- Add all the burger mix ingredients to a large mixing bowl and mix together until fully combined – We recommend getting stuck in and using your hands to make sure the mix is blended together properly.
- Divide the mix into four. Roll each of the portions into balls and shape them into burger patties, (about a finger width in size). If you’ve got time, pop them on a plate and back in the fridge for an hour or two to firm up a little.
- Don’t panic if your patties are feeling loose. Mushrooms retain a lot of water which will come out at some point during the burger making process.
Blended Burger
- Put your frying pan on medium to high heat and add a spoonful of vegetable oil to the pan. Once hot, add your patties to the pan for 3 minutes.
- Flip the burgers for a further minute then add a slice of cheese to the top of each patty. Reduce the heat, place a lid over the burger and cook until the cheese is melted and bubbling away.
- Whilst the cheese is melting on the patties, grill the bacon rashers until extra crispy and lightly toast the burger buns.
- Once toasted, slather the mayo to the top and bottom of the bun. Begin to build the burger by adding a big handful of rocket, 2 rashers of crispy bacon and the juicy mushroom patty to the bun. Top with a generous portion of pickled shallots and you’ve got your mushroom umami blended burger bomb!

Don’t hang about, tuck right in and do the washing up afterwards.
