MISO MUSHROOMS ON TOAST

Ingredients 

  • 1 tbsp olive oil
  • 200g chestnut mushrooms
  • 1 tbsp miso paste
  • 1 tbsp soy sauce
  • 4 slices Sourdough bread
  • 2 avocados, mashed
  • Coriander or parsley
  • Sesame seeds

Method 

  1. Add the olive oil to a pan and then the chestnut mushrooms and cook until slightly golden.
  2. Meanwhile mix the miso paste with 2 tbsp of hot water in a bowl together until smooth.
  3. Pour the miso mixture into the pan along with the sauce sauce and continue cooking until it reduces slightly.
  4. Spread the avocado on the toast and then add on the Miso Mushrooms.
  5. Sprinkle sesame seeds and coriander and parsley
