Ingredients
- 1 tbsp olive oil
- 200g chestnut mushrooms
- 1 tbsp miso paste
- 1 tbsp soy sauce
- 4 slices Sourdough bread
- 2 avocados, mashed
- Coriander or parsley
- Sesame seeds
Method
- Add the olive oil to a pan and then the chestnut mushrooms and cook until slightly golden.
- Meanwhile mix the miso paste with 2 tbsp of hot water in a bowl together until smooth.
- Pour the miso mixture into the pan along with the sauce sauce and continue cooking until it reduces slightly.
- Spread the avocado on the toast and then add on the Miso Mushrooms.
- Sprinkle sesame seeds and coriander and parsley
