Combine the sauce Ingredients into a bowl and mix well
In a large pan, gently melt in two tablespoons of butter, one of miso, until they start to bubble. Cook your scrambled eggs in the miso butter and set aside
Next soften your onions in a bit of veggie oil
Add your mushrooms for more softening, then add the rest of the veggies
Add your cold rice and sauce. Now stir fry until thoroughly heated, then stir through the scrambled eggs towards the end
