Miso Mushroom Fried Rice

Ingredients

Sauce:

  • 2 tablespoons Shaoxing Rice Wine
  • 2 tablespoons soy sauce
  • 1 tablespoon white miso paste
  • 2 teaspoons sesame oil
  • 2 teaspoons sriracha
  • 4 cloves garlic minced
  • 2 teaspoons ginger minced

Fried Rice:

  • 3 cups cooked rice
  • 2 tablespoons neutral cooking oil
  • 2 tablespoons butter
  • 1 tablespoon miso paste
  • 4 eggs beaten
  • 1 white onion diced
  • 250g sliced white mushrooms
  • 2 Carrots Julienned
  • 1/2 Savoy Cabbage Shredded
  • Salt and pepper to taste

Method

  1. Combine the sauce Ingredients into a bowl and mix well
  2. In a large pan, gently melt in two tablespoons of butter, one of miso, until they start to bubble. Cook your scrambled eggs in the miso butter and set aside
  3. Next soften your onions in a bit of veggie oil
  4. Add your mushrooms for more softening, then add the rest of the veggies
  5. Add your cold rice and sauce. Now stir fry until thoroughly heated, then stir through the scrambled eggs towards the end
  6. Serve, munch and enjoy
