MEDITERRANEAN MUSHROOM MEZZE BOARD

Ingredients 

  • 400g baby chestnut mushrooms
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 180g mixed olives
  • 1 x 200g pot of tzatziki
  • 1 cucumber, sliced into batons
  • 200g plum tomatoes, sliced in half
  • 175g artichokes
  • 2 mixed peppers, thinly sliced sliced peppers
  • 40g mini breadsticks
  • 100g radishes
  • 160g mini mozzarella balls
  • 2 tbsp extra virgin olive oil
  • Salt

Method 

  1. Prehead over to 200°C Fan.
  2. Add the baby chestnut mushrooms to a baking dish. Coat with olive oil and season with a pinch of salt and pepper. Pop in the oven for 20 minutes, adding the garlic halfway through.
  3. Remove from the oven and add the fresh parsley, stirring to combine. Pour into a serving ramekin and centre it in the middle of your mezze plate.
  4. Add the tzatziki next and build the board by adding the cucumber, peppers, tomatoes and breadsticks. Then, fill the gaps with the artichokes, mini mozzarella balls, radishes and mixed olives.
  5. Serve with cocktail sticks for ease and dive in!
