LOADED HASH BROWNS WITH GARLICKY PORTOBELLO MUSHROOMS, AVOCADO AND LEMON

Ingredients 

  • 8 frozen hash browns
  • 3 portobello mushrooms, thinly sliced
  • 2 ripe avocados, thinly sliced
  • Lemon, sliced into wedges to serve
  • Handful of fresh parsley
  • 1 tbsp olive oil
  • 1 tsp garlic granules
  • Sprinkle of chilli flakes
  • Salt
  • Pepper
  • Sesame seeds (optional)

Method 

  1. Cook the hash browns according to the packet instructions, either in your air fryer or oven.
  2. Fry the portobello mushrooms in 1 tbsp olive oil over a medium heat. Season with salt, pepper, garlic granules and optional chilli flakes. Fry for around 6 minutes, or until the moisture has cooked off and they have nicely browned.
  3. Assemble by plating up the hash browns, then add a few thin slices of avocado, sautéed portobello mushrooms, and top with a squeeze of lemon, fresh parsley, and optional sesame seeds.
