Ingredients
For the Kebabs per skewer:
- 6 Button Mushrooms
- 2 slices of courgette
- 2 slices of halloumi
For the BBQ Mushrooms Glaze :
- 50 ml olive oil
- 1 tsp oregano
- 1 tsp chilli flakes
- 1/2 tsp salt
- 1 tbsp honey
Method
- Clean the mushrooms with a damp cloth. Cut the halloumi into bite-sized cubes, and slice the courgette into thick rounds.
- Thread the mushrooms, halloumi and courgette alternately onto skewers.
- In a small bowl, mix the olive oil, garlic, oregano and chilli flakes. Brush this mixture generously over the skewers. Season with a little salt and black pepper.
- Place the skewers directly onto a preheated barbecue. Cook for 10–15 minutes, turning occasionally, until the mushrooms are charred and caramelised, and the halloumi is golden and slightly crispy at the edges.
- Serve hot, straight from the grill. These skewers are perfect for sharing and guaranteed to be a hit.
