GRILLED MUSHROOMS AND HALLOUMI SKEWER

Ingredients 

For the Kebabs per skewer:

  • 6 Button Mushrooms
  • 2 slices of courgette
  • 2 slices of halloumi

For the BBQ Mushrooms Glaze :

  • 50 ml olive oil
  • 1 tsp oregano
  • 1 tsp chilli flakes
  • 1/2 tsp salt
  • 1 tbsp honey

Method 

  1. Clean the mushrooms with a damp cloth. Cut the halloumi into bite-sized cubes, and slice the courgette into thick rounds.
  2. Thread the mushrooms, halloumi and courgette alternately onto skewers.
  3. In a small bowl, mix the olive oil, garlic, oregano and chilli flakes. Brush this mixture generously over the skewers. Season with a little salt and black pepper.
  4. Place the skewers directly onto a preheated barbecue. Cook for 10–15 minutes, turning occasionally, until the mushrooms are charred and caramelised, and the halloumi is golden and slightly crispy at the edges.
  5. Serve hot, straight from the grill. These skewers are perfect for sharing and guaranteed to be a hit.
