GARLIC AND PARMESAN MUSHROOM CRISPS

Ingredients 

  • 300g chestnut mushrooms, sliced into quarters
  • 1 tbsp parmesan, finely grated
  • 2 tbsp crispy onions
  • Handful of fresh parsley, finely chopped
  • 1 tbsp olive oil
  • 1 tsp garlic granules
  • Salt and pepper

Method 

  1. Start by preheating a pan over high heat. Once hot, add the olive oil and mushrooms.
  2. Leave to brown for 5 minutes for maximum colour, then stir and season with salt and pepper.
  3. Continue to fry for another 3 minutes, then pour onto a plate.
  4. Allow to cool for around 5 minutes, then top with crispy onions, parmesan, fresh parsley and a crack of black pepper. Enjoy with cocktail sticks.
