SWEET POTATO MUSHROOM HASH

Ingredients

  • 2 tbsp Olive oil
  • 1 small white onion
  • ½ Sweet potato 2cm dice, skin on
  • 1 tsp Thyme
  • 1 tsp Oregano
  • 1 tsp Paprika
  • 1 tsp Cayenne,
  • ½ tsp black pepper
  • 160g Portobello, sliced
  • 100g Kale, stems removed, shredded

Method

  1. Large lidded saute pan, fry the onions and sweet potato with seasoning in the oil
  2. Cover for 8 minutes to steam the potatoes
  3. Uncover, move the Ingredients to one half of the pan, add the mushrooms and spices
  4. Saute for a few minutes until golden and massage the kale with salt in the mean time
  5. Add the kale and stir through for the last few minutes of cooking
  6. Serve straight away
