Ingredients
- 2 tbsp Olive oil
- 1 small white onion
- ½ Sweet potato 2cm dice, skin on
- 1 tsp Thyme
- 1 tsp Oregano
- 1 tsp Paprika
- 1 tsp Cayenne,
- ½ tsp black pepper
- 160g Portobello, sliced
- 100g Kale, stems removed, shredded
Method
- Large lidded saute pan, fry the onions and sweet potato with seasoning in the oil
- Cover for 8 minutes to steam the potatoes
- Uncover, move the Ingredients to one half of the pan, add the mushrooms and spices
- Saute for a few minutes until golden and massage the kale with salt in the mean time
- Add the kale and stir through for the last few minutes of cooking
- Serve straight away
