CREAMY MUSHROOMS ON TOAST

We’ve teamed up with Ellena Hoad for this mushroom recipe:

Ingredients 

  • 1 slice sourdough
  • 80g pre-sliced closed-cup mushrooms
  • 1 garlic clove, minced
  • 1 tbsp crème fraîche
  • Handful of parsley, chopped
  • Salt & pepper
  • 1 slice prosciutto
  • 10g butter

Method 

  1. Toast your sourdough and set it aside.
  2. Melt the butter in a pan, then add the mushrooms with a pinch of salt and pepper. Cook for 2 minutes, then stir in the garlic and crème fraîche. Let everything bubble until the mushrooms are soft and glossy.
  3. Mix through the chopped parsley and pile the mushrooms on top of your toast.
  4. Pan-fry the prosciutto until crispy and place it over the mushrooms to finish.
