BBQ’ED MUSHROOM KEBABS

Ingredients

  • Mixed mushrooms (portobello, button, chestnut)
  • 180ml vegetable oil
  • 60ml white vinegar
  • 30ml maple syrup
  • 1/2 tsp smoked Paprika
  • 4 tsp onion granules
  • 2 large garlic gloves, crushed
  • 2 tsp chilli flakes
  • 1 tsp dried sage
  • 1 tsp smoked sea salt
  • 1 tsp black pepper, ground

Method

  1. Thread the mushrooms whole onto the skewers, or cut some in half to create a mixture.
  2. In a bowl mix together the remaining Ingredients to create a marinade and then place the mushrooms in to marinate.
  3. Put the marinated mushrooms on skewers, ready for the BBQ.
  4. Finally, BBQ the skewers or cook on a griddle pan until cooked through. Baste with additional marinade occasionally while cooking, any leftover marinade can be used as a salad dressing or will keep in the fridge for a few days.
